Quinoa Falafel Citrus Crunch Wraps
Ingredients
Wrap
1 bag Taylor Farms Citrus Crunch Chopped Kit
6 Gluten-free tortillas
12 Mini quinoa falafel
Fresh Rocket leaves
Red onion sliced
Citrus Yogurt Sauce
1 Mandarin
Vegan Parmesan Cheese
¾ Cup raw cashews
3 Tbsp nutritional yeast
¼ Tsp garlic powder
¾ Tsp salt
Mini Quinoa Falafel (makes 12)
½ cup cooked quinoa
1 can chickpeas (drained)
1 Tbsp minced garlic
2 Tbsp fresh parsley leaves
2 Tbs vegan Parmesan cheese
½ lemon juiced
Pinch salt & pepper
Citrus Yogurt Sauce
Citrus Dressing (from Chopped Kit)
½ Cup unsweetened non-dairy yogurt
Directions
Blend all Vegan Parmesan Cheese ingredients together in a food processor/blender until very fine. Store in the fridge.
Preheat oven to 200°C. Add all ingredients from the Mini Quinoa Falafel list to a food processor/blender until chickpeas broken up but not so much where it turns into hummus.
Using about spoonful of tablespoon, roll into balls (roughly 12) and place them on baking paper and bake for 20 minutes. Flip halfway in between
Stir the all ingredients of Citrus Yogurt Sauce till well mixed
Place Lettuce (from Chopped Kit) and arugula in your gluten-free tortillas
Followed by 2-3 Mini quinoa falafel, dried cranberries, quinoa almond crunch mixture (from Chopped Kit) and sliced red onion. Top with citrus yogurt sauce.
