Coconut Curry & Tofu Ramen Noodle Bowl

Ingredients

1 bag Taylor Farms Coconut Curry Stir Fry Kit

1 block firm tofu, drained, pressed and cubed

2 block brown rice & millet ramen noodles

Olive oil

Salt & pepper to taste

Directions

Preheat the oven to 200°C and line a baking paper on baking tray. Set aside.

Toss drained, pressed & cut tofu with olive oil, salt & pepper. Bake for 20-25 minutes then remove from oven and set aside.

Cook the ramen according to the package instruction. Drain and set aside.

While tofu bakes, heat 1 tablespoon olive oil in a large non-stick pan over medium-high heat. 

Add the vegetables from the Taylor Farms Coconut Curry Stir Fry Kit cook for 4-5 minutes, stirring frequently. 

Add sauce, tofu and noodles, tossing well so sauce covers every element. 

Cook for another 1-2 minutes, serve.
