Citrus Crunch Salad with Triple Citrus Chicken

Ingredients

1 bag Citrus Crunch Chopped Kit

450g Chicken breast

Chicken Marinade

1/4 cup olive oil

1 lemon, zested and juiced

2 mandarins, zested and juiced

1 lime, zested and juiced

2 tsp fresh rosemary, minced

Directions

Add all ingredients into a large mixing bowl, whisk well then add to a large zip lock bag. Marinate the chicken breasts to the sauce and leave in a fridge for at least an hour or overnight for maximum flavour. Once the chicken is marinated, sprinkle with salt.

Preheat BBQ to medium heat and brush small amount of oil to prevent sticking. Place chicken on the BBQ. Cook for approximately 5 – 6 minutes per side, the internal temperature of the chicken should reach 165 degrees. Remove chicken from the BBQ and let rest for 5 minutes.

In a large salad bowl toss Taylor Farms Citrus Crunch Chopped Kit with all of the components and dressing, mix well. Place Chicken on top.
